Meal plan: week of March 19, 2018
I’ve started a new grocery-shopping move the last few weeks that is huge – the pre-preschool shop. Little fella starts at 9am, so we leave the house a bit before 8, do the week’s shop, and then drop off. Unload on arrival at home, and I still have the whole morning to lie around eating bonbons! Perfection!
Monday. One-pan farro with tomatoes, from Smitten Kitchen Everyday (this is so completely delicious, highly recommend), and easy spanish tortilla, because our house is presently overloaded with potatoes.
Tuesday. Pizza! One plain cheese with red lentil marinara sauce (happily from the freezer), and one with ricotta and some sort of vegetable. I’ll prep the sourdough pizza dough on Monday night.
Wednesday. Kiddo cooks! She’s making spaghetti loaded with vegetables.
Thursday. Buddha bowls with wheat berries, baked tofu, red cabbage and carrot slaw, roasted sweet potatoes carrots, and tahini lemon sauce over the top.
Friday. Butternut squash coconut soup with fresh bread.
